It made no sense to me to create a completely gluten free space, then use the same soft goods in the conventional kitchen and the gluten-free work room. The appliances, pans, bowls, tools and ingredients were all separate from the conventional kitchen, so it stood to reason the linens should be too. This way everything related to gluten free cooking could be washed and laundered separately just as the pans and utensils are washed and sterilized in their own cycle.

Now this is where my ADD and OCD just shines so brilliantly! I had ordered aprons at the same time I ordered kitchen tea towels years ago for the farmstand. When I got them they had a plastic coating on them which I hated. Ok for placemats, but an apron you wear for hours? I think not.
On top of that, the strings crinkled and shriveled and were just nasty. I ordered new cotton twill heavy binding and made extra long replacement straps, but I still wasn’t crazy about wearing them.

That is, until I needed to differentiate between the GF and the bakery kitchen. I ordered the same flour sack cheap cotton towels I like to grab hot things with from amazon, but took it a step further and dyed them orange and coral like the microfiber cloths I picked up from home goods.

So now, the GF space is becoming wonderfully colorful and cheerful, which is fantastic. It offsets the stresses of failed recipes and baked goods that turn out to be under par. I am shooting for flavor, texture and chew that’s pleasurable. Pleasurable to me, a person who is not gluten allergic.
I think that if one has to live without gluten, there must be a replacement that is satisfying and delicious.
This is born out of my goal of creating baked goods that are inclusive for everyone, not the fact I’m gluten intolerant. I have my own mixed bag, and it’s no joke. I want everyone to enjoy what I create.
I always felt bad when someone couldn’t have my cinnamon rolls because they weren’t gluten free, or sorry they couldn’t share with their loved ones. I vowed to work on that, and now I am.

Working in this space makes me happy, and I need that to create things that make others happy.
